Support programs and SOPs that must in place to support the HACCP system. They may be often described as pre-requisites programs, Good Manufacturing Practices (GMP) or standard operating procedures (SOP). These are generally systems (e.g. Personal Hygiene, training, cleaning and sanitation, etc). That will effectively design out generalized hazards that apply to the whole operation, leaving HACCP to deal with the specific product- process hazards. These support programs are normally in place before the HACCP system is developed as cleaning and disinfections.
